Games that use dice and the dice themselves date back to the Middle Eastern Crusades, but modern craps is just about a century old. Modern craps evolved from the old English game called Hazard. Nobody absolutely knows the origin of the game, however Hazard is believed to have been created by the Englishman, Sir William of Tyre, around the 12th century. It’s believed that Sir William’s paladins wagered on Hazard through a siege on the citadel Hazarth in 1125 AD. The title Hazard was gotten from the fortification’s name.
Early French settlers brought the game Hazard to Acadia. In the 1700s, when driven away by the English, the French relocated south and settled in the south of Louisiana where they eventually became Cajuns. When they left Acadia, they took their favored game, Hazard, with them. The Cajuns simplified the game and made it fair mathematically. It’s believed that the Cajuns altered the title to craps, which was acquired from the term for the losing throw of snake-eyes in the game of Hazard, referred to as "crabs."
From Louisiana, the game extended to the Mississippi riverboats and throughout the country. Many acknowledge the dice builder John H. Winn as the founder of modern craps. In 1907, Winn built the modern craps setup. He added the Don’t Pass line so players could bet on the dice to lose. At another time, he established the spots for Place bets and added the Big 6, Big 8, and Hardways.
